Pumpkin Pie Cake

Mix together and pour into a 13 x 9

pan:

1 large can pumpkin (29 oz.)

2 T pumpkin pie spice

1 can evaporated milk (12 oz.)

4 eggs

1 C sugar

1 t vanilla

½ t salt

Sprinkle 1 box Duncan Hines Spice Cake Mix

( found at Price Choppers) over the above ingredients.

Melt 1 C butter or margarine and drip evenly

over cake mix.

Sprinkle 1 C chopped pecans on top. Bake at 350

degrees for one hour.

~A Recipe for your collection~

Three-Cheese & Pepper Penne

1 pkg. (16 oz) penne pasta

1-1/2 lbs. Boneless skinless chicken breasts, cut into 1/2 inch

pieces

1-1/4 tsp. Salt

1/2 tsp. Pepper

3 tsp. Olive oil, divided

1 lb. Sliced fresh mushrooms

4 garlic cloves, minced

1/4 cup butter, cubed

1/2 cup all-purpose flour

4 cups 2% milk

2 jars (7 oz each) roasted sweet red peppers, drained and chopped

2 cups (8 oz) shredded mozzarella and provolone cheese

2 cups grated Parmesan cheese, divided

 

Cook pasta according to package directions. Meanwhile, sprinkle

chicken with salt and pepper. In a large skillet, saute chicken in 1

tsp. oil until no longer pink. Remove from the skillet. In the same

skillet, saute mushrooms in remaining oil until tender.

In a Dutch oven, saute garlic in butter for 1 minute. Stir in flour

until blended; gradually add milk. Bring to a boil; cook and stir for

1-2 minutes or until thickened. Stir in red peppers, mozzarella and

provolone cheese, 1/2 cup Parmesan cheese, mushrooms, and

chicken.

Drain pasta; stir into sauce. Divide between two greased 8-in.

square baking dishes. Sprinkle each with remaining Parmesan

cheese. Cover and freeze one casserole for up to 3 months. Cover

and bake the remaining casserole at 350* for 30-35 minutes or until

bubbly.

 

To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350* for 60-70 minutes or until bubbly, stirring once.

 

 

Just right for the season!!!  Try this soup recipe.  It got rave reviews at the recent board luncheon/meeting. 

 

 

5 Can Soup          

 

Servings: 8

 

1 can Progresso minestrone soup

1 can white corn

1 can mixed vegetables

1 can black beans

1 can diced or chopped tomatoes ( Use  tomatoes with chilies for more heat

 

Dump all cans together in a pan and heat through. Do not drain any cans – pour

everything  in.

 

This is a very good and fast soup to make.  Add cheese for garnish and taste.

Bar-b-cue Green Beans

4 slices bacon
¼ cup chopped onion
½ cup ketchup
¼ cup brown sugar
1 Tbsp. Worcestershire sauce
2 cans french style green beans, drained

Preheat oven to 350 degrees. Cook bacon until crisp. Using 1 tablespoon of bacon grease, cook onions until soft and translucent. Add ketchup, brown sugar and Worcestershire sauce to onions and bacon grease. Crumple bacon slices into sauce and simmer 2 minutes. Placed drained green beans in casserole dish and pour sauce over the top---DO NOT Stir. Bake for 20 minutes. Makes 6 servings.

 

 

Broccoli Cheese Soup

6 Cups water 1 20 oz. bag frozen broccoli/cauliflower
4 chicken bouillon cubes 2 cans cream of chicken soup
1 cup diced onion 1 lb. Velveeta cheese, cut up in cubes
1 cup diced carrots
1 ½ cups cubed potatoes

In a large pan combine the water and bouillon cubes. Bring to a boil and add the vegetables. Allow to boil for 15 minutes then add the 2 cans of soup. Stir but do not allow to boil. Next add the cheese cubes, stir until melted. Simmer and serve.
 

 


 

Quick and Easy Appetizers

 

Cordon Bleu Appetizers

 

4 oz. cream cheese, softened

1 tsp. Dijon mustard

1 cup (4 oz) shredded Swiss cheese

3/4 cup diced fully cooked ham

1/2 cup minced chives, divided

18 slices French Bread (1/2 inch thick)

 

In a small bowl, beat cream cheese and mustard until smooth.  Stir in the Swiss cheese, ham and 1/4 cup chives.  Spread 1 Tbsp. mixture over each bread slice; place on an ungreased baking sheet.

 

Bake at 350* for 12-15 minutes or until lightly browned.  Sprinkle with remaining chives.

 

Pesto Cheese Tarts

 

2/3 cup chopped tomatoes

1/3 cup mayonnaise

1/4 cup shredded park-skim mozzarella cheese

3 tablespoons shredded Parmesan cheese

2 teaspoons prepared pesto

1/8 teaspoon pepper

1 package (2.1 ounces) frozen miniature phyllo tart shells

 

In a small bowl, combine the tomatoes, mayonnaise, cheeses, pesto and pepper.  Spoon heaping teaspoonfuls into tart shells.  Place on ungreased baking sheet.  Bake at 350* for 8-12 minutes or until lightly browned.

 

*Filling can be mixed the night before and stored in the refrigerator.

 

 

 

Swiss Chicken Casserole

4 c cooked boneless skinless chicken breasts shredded or cut into bite size pieces
1 medium onion, chopped
2 c Pepperidge Farm classic-cut seasoned croutons--I have had a very hard time finding the classic cut croutons--the Hyvee that I shop at only carries the generous cut. If you find the classic cut let me know where you found them.
1 and 1/2 c mayonnaise (you can use lite)
1 c sour cream (you can use lite)
1 (2 cup size) pkg. dry buttermilk Ranch dressing mix
2 c swiss cheese, shredded

I usually grill the chicken breast ahead of time, but you can also boil them. I have found that 5 of the frozen breasts from Sams Club will yield 4 cups.

Combine the shredded pieces of chicken, onion, croutons and swiss cheese in a large bowl; set aside.

In a separate bowl mix the mayonnaise, sour cream, and dry Ranch mix until well blended. Pour this mixture over the chicken/crouton mixture and mix until well coated. Pour into a 9 x 13 casserole dish and bake at 325 degrees for 40 minutes.

I think mushrooms would be good in this and asparagus or artichokes.

Easy Fried Donut Holes

 

1 large can (16.3 oz) Pillsbury Buttermilk Biscuits

Oil

Cinnamon

Sugar

 

Cut each biscuit into 8 sections.  Roll tight balls.  Heat oil until hot.  Drop rounded bisucites into oil and fry until puffy and golden brown.  Scoop out with slotted spoon and place on paper towel to drain.  Roll in cinnamon and sugar.  Yield 64 donut holes.

 

 

 


 

 

Butternut Squash Bisque

Served at October NNL Luncheon

INGREDIENTS:

1 medium butternut squash, roasted, peeled

and seeded

½ cup orange juice

1/3 cup packed brown sugar

¼ cup maple syrup

1/8 cup molasses

1 cinnamon stick

½ cup chopped onion

¼ cup celery

¼ cup butter, cubed

4 cups chicken broth

1 cup heavy whipping cream

Salt and pepper to taste

¼ cup soft butter

1. Sweat the onion and celery in the butter until translucent.

2. Add orange juice, brown sugar, syrup, molasses, cinnamon stick, chicken broth and squash and cook for 15-20 minutes on low heat.

3. Puree the soup, strain through a china cap and return to moderate heat.

4. Season to taste, add cream and a second portion of soft  butter.
